Manual harvesting is carried out in the highest quality areas where the first selection is made in 12 kg boxes. Subsequently, grape selection is carried out on the reception tables and during tank filling.
Alcoholic fermentation and maceration take place in small stainless steel tanks during a careful 18-day process. Malolactic fermentation takes place in 255- and 500-liter French oak barrels. The wine is racked and aged for an additional 12 months in fine-grained French and American oak Bordeaux barrels. Its stabilization is natural.
