From October 1st to 10th, we are celebrating the XX Week of Cazuelica and Navarra D.O. Wine, an event that combines tradition and innovation.

The Cazuelica and D.O. Navarra Wine Week (delete October 1 to October 10, 2021is organized by the Hotel and Tourism Association of Navarra, is sponsored by the Regulatory Council of the Designation of Origin of Navarre, the official provider is the Hospitality Cooperative

The Cazuelica Week is an event that combines tradition with innovation. It's the perfect occasion to taste delicious mini stews that are both traditional and original, thanks to the participants' preparation methods.

After 20 years of celebration, the concept of Cazuelica, traditional cuisine, "grandmother's cooking," has become a miniature gastronomic jewel, paired with our Navarrese wine heritage.

The objective of this event, now in its 20th year, remains to promote the appreciation and recovery of traditional cuisine in culinary creations, both in terms of the products themselves and the methods of cooking them.

In this twentieth edition, 30 establishments have registered. The participants are from Pamplona, Tudela, Ayegui, and Larraga, with the majority concentrated in the Navarrese capital.

They will participate with a single cazuelica that is entered in the Contest organized to award the best creations. 70% of the cazuelicas presented are suitable for celiacs. Wine, or drinks, are not included in the price of the cazuelica, which remains the same as in previous years and is 2.40 euros.

CAZUELICA OBJECTIVE

  • To empower creations that highlight and revive traditional cuisine, as well as ingredients and cooking methods.
  • The support on which the creations will be presented must be a cazuelica, with the establishment choosing its size, material, and color.
  • Since its first edition, wine pairings with D.O. Navarra wine have been provided, so that along with the name of the dish, a specific D.O. Navarra wine is recommended as a good complement.

AWARDS – HIGHEST HONORS

– GOLD, SILVER, AND BRONZE. Who will receive a diploma and gifts from different collaborators.

– D.O. NAVARRA AWARDS:

  • For the fourth consecutive year, a diploma will be awarded to the selected winery whose wine is recommended with the winning cazuela (Gold, Silver, and Bronze). In turn, the selected wineries will deliver a case of six bottles of the recommended wine to the establishment awarded with the highest prizes. Wine is a very important part of this week, and its pairing with the cazuela creates a perfect connection.
  • Award for "Best Wine Service" granted by the Regulatory Council of DO Navarra Wines, with the objective of "from the bars of our taverns" improving every day and offering customers an exquisite wine service where all details are taken care of.

SPECIAL MENTIONS

  • "Best Casserole Made with Game Products," awarded by Pirineos Exdim. The winner will receive a symbolic check for 250 euros to purchase game products.
  • "Best Cazuelica made with Sandúa Oils," awarded by Aceites Sandúa. The winner will receive a Sandúa product kit. Aceites Sandúa is participating for the fifth consecutive year in the Cazuelica and Wine Week in Navarra, with the award for the best cazuelica made with any of their oils. To enter, establishments only need to cook their cazuelica using their preferred oil from the wide range offered by Sandúa. It is important to note that all Sandúa oils are palm-free, free of saturated fats, and free of other potentially allergenic ingredients. Because health matters, now more than ever.
  • Best "Cazuelica" (small clay pot dish) made with "Local Produce" award granted by the Pamplona City Council. The winner will receive a diploma and a gift.
  • Best Casserole made with "Organic Product" awarded by CPAEN - Navarra Ecológica. The winner will receive a diploma and a selection of Eko Logikoak products.

All award recipients receive a diploma accrediting their awardee status.

CONTEST

The Jury members, comprised of 6 professional chefs and coordinated by the Hospitality Association, will be in charge of tasting the stews during the week to identify those that stand out for their superior gastronomic qualities.

The bars will be distributed into different groups, taking into account whether they have won any awards in previous editions. The most awarded ones will be distributed to avoid them all being in one group, for the benefit or detriment of another.

The evaluation criteria for determining the finalists will be: Product, Aesthetics, Technique, Aroma, Temperature, Flavor, Balance, Sensation, Overall, etc. This is an incentive to increase the quality of the creations.

For the "Best Wine Service" award, all aspects related to wine will be taken into account, such as temperature, preservation, glassware, recommendation, service...

This year, the scheduled date for the final will be Thursday, October 14th in the morning at the Hospitality Cooperative Hall, where, with all safety measures in place, the cooks will prepare their "cazuelicas" before a professional jury, also comprised of professional chefs and different from the base jury.

On Monday, October 11th, the establishments that have reached the finalist status will be announced.

ACTIVITIES FOR THE PUBLIC

Show cooking

Next Monday, October 4th at 7:00 PM, a very special online ShowCooking will take place featuring the "cazuelicas" from the establishments that received the highest awards in 2020.

The three chefs from the three awarded establishments will cook from the kitchen of the previous year's winner: La Cocotte Taberna (Calle Abejeras, 43) and it will be broadcast live from the @hostelerianavarra Instagram profile.

Get-together

During the week, a group of people will be invited in compliance with current regulations to go on a bar crawl. This event is designed for people to enjoy *cazuelicas* (small stews served in earthenware dishes) paired with D.O. Navarra wines in a fun and friendly atmosphere. The objective is to promote and share *cazuelicas* and their pairing with D.O. Navarra wines offered by each establishment through blogs and social media.

"CONTEST IGERS CAZUELICA AND WINE D.O. NAVARRA".

For the eighth consecutive year, a photography contest will be held on Instagram, open to the general public, in which users can participate by uploading photos they take during this gastronomic event.

The prize, awarded by a jury, will be for the most original photograph, and the winner will receive a case of 6 bottles of D.O. Navarra wines. The prize will be awarded on Thursday, October 14, coinciding with the final of "la Cazuelica."

The requirements to participate are:

  • Upload a photo to Instagram showing one or more cazuelicas paired with one of the Navarra D.O. wines recommended by the establishments.

On the other hand, a poster-leaflet has been edited for download from the website. www.semanadelacazuelica.com And on the posters there will be a QR code where participants and their proposals can be consulted. Distribution will be at the Pamplona and Tudela Tourist Offices, in Pamplona's 32 Hotels, as well as in all participating establishments of the event.
