Breeding: The grapes, which are harvested cold overnight, are macerated for 4-5 days in small stainless steel tanks. During this time, while a slow fermentation is initiated by selected yeasts, all the character of this variety is gently delivered. Combining delestage and pumping over at certain times, we favor the extraction and maceration process. Maceration is extended for 10 days after fermentation. We press gently and the wine undergoes malolactic fermentation in even smaller stainless steel tanks. When the wine has naturally lost the thickest cloudiness, we transfer the wine to fine-grained French oak barrels of Vosges origin. These are handcrafted barrels of which only 300 units are produced per year, with a natural drying period of 60 months. The wine is aged for 12 months in these same barrels without racking. The wine is bottled after light filtration without fining.22
