Finca La Pared Cuveé Special D.O. Navarra
It is a voluminous, fresh, long and endless wine. Sweetness, eternal. Complexity that does not intimidate.
Grape varieties: Cabernet Sauvignon, Syrah, Graciano
Breeding: Fermentation and maceration are carried out separately for each variety, in small stainless steel tanks, combining pumping over and delestage. The process is prolonged for approximately 20 days with gentle extractions. We press gently and the wine undergoes malolactic fermentation in even smaller stainless steel tanks. When the wine has naturally lost the thickest cloudiness, we transfer the wine to barrels; each variety separately and in oak of different origins. For the Graciano we choose French oak of Vosges origin with fine grain in new handcrafted barrels, of which only 300 units are made per year, with a natural drying period of 60 months. For Syrah we choose American oak barrels that enhance the freshness of the wine and promote its refinement. The wine is aged for 12-14 months in these same barrels without racking. The wine is blended and bottled without fining.
