The Navarrese town will celebrate an event on August 7th that will explore the Roman past of Santa Criz and the present of its wines, with a paired tasting featuring Bodega Eslava, Baja Monta\u00f1a Vi\u00f1edos y Bodegas, and the guest Bodegas Tar\u00f3n.<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Eslava will celebrate a new edition of Villa de Vi\u00f1as on Friday, August 7th, an enotourism experience that will combine archaeology, wine, gastronomy, and viticultural innovation to discover the territory from its Roman past to the new work models being developed in its vineyards. The day will begin with a visit to Santa Criz de Eslava, built around the relationship between wine and Roman civilization. The archaeological site, declared a Bien de Inter\u00e9s Cultural (Asset of Cultural Interest) in 2016, preserves important remains of its forum and necropolis and is considered the most monumental Roman city preserved in Navarra, as well as one of the most relevant archaeological sites in the northern Iberian Peninsula. After the historical tour, the experience will continue with a wine and tapa pairing tasting, featuring Bodega Eslava, Baja Monta\u00f1a Vi\u00f1edos y Bodegas, and as a guest winery, Territorio Tar\u00f3n\u2013Bodegas Tar\u00f3n, from Rioja Alta. The session will allow participants to learn about different ways of interpreting the vineyard and establish a dialogue between two wine regions. Eslava has a long tradition, particularly marked by Grenache grapes. The diversity of altitudes, orientations, and dry, stony soils in the area results in fresh, aromatic wines with floral and herbal notes and the characteristic tension of the Baja Monta\u00f1a sub-region of the D.O. Navarra. This connection to the vineyard is exemplified by Territorio Eslava, Baja Monta\u00f1a, a regenerative viticulture project that uses indigenous microorganisms to improve soil fertility and reduce the use of phytosanitary products. Wines made from grapes from these plots will be tasted at Villa de Vi\u00f1as.
